The squash is a yellow summer squash. You can vary ingredients to your taste, it always turns out well regardless of cooking experience. Depending on my mood or memory, I may substitute in shredded carrots, spinach, and/or eggplant and forget something else.

Recipe Ingredients for Suzanne's Veggie Lasagna - so good even meat eaters enjoy

1 tsp Pam cooking spray
1 1/2 zucchini, chopped
1 1/2 Squash, chopped
1/2 portobello mushrooms, sliced
1/2 medium white onion, diced
15 oz light ricotta cheese
26 oz marinara sauce
3/4 lb whole wheat lasagna noodles
4 cup mozzarella cheese, shredded

Recipe Directions for Suzanne's Veggie Lasagna - so good even meat eaters enjoy

  1. Spray glass baking dish with cooking spray

  2. Layer, including noodles, will go in glass 9"x13" dish RAW

  3. Set aside half of the mozzarella cheese and all of the parmesan for the top layer

  4. One layer of raw noodles first

  5. One layer marinara sauce

  6. One layer of mixed zucchini and summer squash

  7. One layer mozzarella cheese

  8. One layer noodles

  9. One layer ricotta cheese (I found that spreading cheese like butter on toast works the easiest)

  10. One layer onion, mushroom, remaining zucchini and squash

  11. One layer noodles

  12. One layer remaining marinara sauce

  13. One layer remaining mozzarella cheese

  14. Sprinkle parmesan on top

  15. Bake in oven at 350 for 30 to 45 minutes or until you can stick a fork through with ease.
