Homemade split pea & ham soup

Recipe Ingredients for Suzanne's Split Pea with Ham Soup

5 cups dry split peas
1 cup shallots, chopped
2 cups celery, chopped
2 cups carrots, shredded
2 T canola oil
3 quarts water
2 bay-leaf
1/2 t thyme
1 ham bone
1 c diced ham

Recipe Directions for Suzanne's Split Pea with Ham Soup

  1. Rinse & bring peas & water to a boil. Boil for 2 minutes remove from heat & soak peas for 1 hour.

  2. Sautee veggies in oil until tender, add peas & ham bone & herbs, salt & pepper to taste. Bring to a boil, simmer 2 hours, until peas are soft. Remove ham bone & dice up ham & add back to pot. Simmer on low until ready to serve, be carfeul not to scortch.
