This is a popular AP sweet dish, prepared on auspicious ocassions.

Recipe Ingredients for Suyyam/Thiyya boorilu

1/4 cup all purpose flour
1/4 cup chickpeas,cooked without salt
1/4 cup brown sugar
10 tbsp oil

Recipe Directions for Suyyam/Thiyya boorilu

  1. sieve flour.

  2. add about 1/3 cup of water and beat well.

  3. keep aside.

  4. coarse grind the cooked chickpeas (optionally use cooked mung bean peas)

  5. keep aside.

  6. heat 1/8 cup of water in a wok, add the brown sugar and stir till the sugar/jaggery dissolves;

  7. keep stirring till a light syrup is made.

  8. add the chickpeas batter to it and mix well.

  9. stir and fry on low flame till the mixture thickens.

  10. cool.

  11. divide into ten portions and make balls.

  12. heat the oil in another wok.

  13. dip the chickpea-jaggery ball into the flour batter till the ball is fully coated.

  14. drop into hot oil and deep fry till the outer layer turns brown flipping the 'boori' over several times.

  15. repeat with the other chickpea-jaggery stuffing.
