1/2 Bread Pita Whole-wheat
1/2 cup garbanzo beans (trader joes organic a favorite)
1/2 cup Cucumber - With Peel, Raw
2 tablespoons Classic Ranch - Creamy Yogurt Dressing
1 oz Jarlsberg Lite Semi-firm Cheese
1/4 Onion Red - 1 med. raw
1 1/2 cup Lettuce Cos Or Romaine - Raw

Recipe Directions for Sutton (esque) Pita Garbanzo Bean Sandwich (Salad)

  1. chop/cube cucumber. marinate in prepared yogurt dressing, preferrably in fridge overnight.

  2. warm pita in toaster

  3. load 1/2 or more garbanzo beans along w/sliced jarlsberg inside warmed pocket

  4. microwave 1 minute

  5. spoon cucumber/yogurt dressing mix.

  6. top w/salad greens, onions

  7. additional greens, onions, cucumber/dressing as side salad
