A crispy new way to enjoy zucchini

Recipe Ingredients for Susan's Zucchini Chips

372 grams Squash, Summer, Zucchini, Includes Skin
3 tbsp Parmesan, Grated Cheese
0.75 cup Bread Crumbs
2 large Egg, White

Recipe Directions for Susan's Zucchini Chips

  1. Preheat oven to 475 degrees

  2. Mix panko and cheese, season as desired

  3. Mix egg whites in a second bowl

  4. Cut zucchini in 1/4 inch rounds or slices

  5. Coat the slices with the egg white

  6. Individually toss chips in Panko/Parmesan mixture. Pat firmly for maximum amount of coverge

  7. Arange chips in a single layer on Pam sprayed non-stick cookie sheet

  8. Bake 5-7 minutes, flip the chips and bake 5-10 minutes more or until crispy

  9. Remove from oven and let cool for a couple of minutes
