Susan Cestaro submitted this awesome Turkey Soup Recipe..perfect timing after all those Thanksgiving Leftovers. PLUS IT IS A THERMOGENIC MEAL! Thank You Susan! Original recipe submitted is pasted here, but it was slightly modified to get nutrient anaylisis> 5-6 cups of turkey breast cut into large chunks 3 stalks celery, coarsely chopped 2 carrots, coarsely chopped 1 medium onion, coarsely chopped 1 can stewed chopped tomatoes 2 cloves garlic, diced leftover drippings from roasted turkey...remove fat from top first 3 cups of frozen spinach 1 small package of sliced mushrooms 2 cups cooked wild rice

Recipe Ingredients for Susan's Turkey Soup

6 cups turkey (breast chopped)
3 stalks celery, coarsely chopped
2 carrots, coarsely chopped
1 medium onion, coarsely chopped
12 oz chopped tomatoes(stewed )
2 cloves garlic, diced
10 oz Turkey gravy (leftover drippings from roasted turkey...remove fat from top first)
3 cups of frozen spinach
2 cups sliced mushrooms
2 cups cooked wild rice

Recipe Directions for Susan's Turkey Soup

  1. In a large stock pot, combine turkey drippings, onions, carrots, celery, garlic and tomatoes. Bring to a gentle boil. Add turkey and continue to boil until vegetables are al dente. Add mushrooms and spinach and rice. Simmer until mushrooms are tender.

  2. Serve with a crusty whole grain bread and a salad of baby field greens.
