This is a great quick meal that uses leftover pork loin. It is a lot quicker and easier if you use pre-cooked brown rice.

Recipe Ingredients for Susan's Pork and Cabbage Fried Rice

6 ounces cooked pork
16 ounces cabbage
1/2 cup brown rice
5 ounces broccoli
1/2 cup onion
1 tablespoon olive oil
2 tablespoons soy sauce
1 tablespoon minced garlic

Recipe Directions for Susan's Pork and Cabbage Fried Rice

  1. Cut pork into small cubes or shred it.

  2. Slice cabbage

  3. Cook rice. You may substitute 1 1/2 cups of already cooked brown rice.

  4. Chop broccoli and heat in the microwave for 2 minutes to soften.

  5. Chop onion.

  6. Heat a non-stick wok for large fry pan on medium-high heat. Add oil to the pan and heat it. Put in the onion and garlic and cook until it softens.

  7. Add the cabbage to the pan and cook until it softens.

  8. Add the cooked pork and broccoli and warm through. Add the brown rice and cook through (about 4 or 5 minutes).

  9. Add the soy sauce, mix in good and turn off the heat.
