Fritatta with veggies...use any that you wish...doesn't have to be those indicated in recipe...try spinach, kale, tomatoes, peppers, onions, broccoli, cabbage, infinite possibilities.

Recipe Ingredients for Susan's Fritatta (1001 Ways)

2 large Egg, Whole
4 large Egg, White
0.5 cup Milk, Buttermilk, Fluid, Cultured, Lowfat
1 cup, chopped Onions
1 cup, chopped Carrots
3 stalk, medium (7-1/2" - 8" long) Celery
2 clove Garlic

Recipe Directions for Susan's Fritatta (1001 Ways)

Whisk 3-4 egg whites and 2 whole eggs and 1/2 cup low-nonfat buttermilk 'till frothy. spray with cooking spray a nonstick or caphalon-type skillet and cook over med heat until wilted ANY veggies you choose...tonight I had 5 spears of slightly wilted celery, an onion, 3 cloves of smashed garlic (whatever veggies you choose), two diced tomatoes.Cook until softened..add some black pepper and red pepper flakes while cooking. Then add the frothy egg mixture to the veggies, tilt pan to distribute evenly, turn heat to low, and cover, let cook until set, about 6-8 min, lifting the edges every minute or so, to let the liquid run underneath, total time about 10 minutes, and cover again, until the whole thing is set. Then if you wish, just before it's set, sprinkle with some Jarlesburg cheese (grated) or parmesan, then pop under the broiler (take the potatoes out of the oven first). serve with some fresh parsley.
