Recipe Ingredients for Susan's Easy Vegetable Soup

1 1/2 cup chopped potatoes
1 1/2 cup chopped carrots
3/4 cup chopped onion
2 tbsp olive oil
1 1/2 cup shredded cabbage
3/4 cup lentils
3/4 cup chopped celery
3/4 cup frozen peas
2 vegetable stock cubes
3 cups water
2 tbsp brown sugar
1/3 cup chopped fresh oregano
2 tbsp chopped garlic

Recipe Directions for Susan's Easy Vegetable Soup

  1. In a very large pot, boil cabbage, potatoes, carrots in 2 cups of water for 20 minutes.

  2. Keep water and add celery and lentils, and simmer for another 15 minutes.

  3. Add stock cubes (made into paste with a little boiling water) and peas, and continue simmering.

  4. Sautee onion and garlic in olive oil, then add to soup along with oregano, sugar and remaining cup of water.

  5. Using a hand blender, puree the entire thing.
