Recipe Ingredients for Susan's Cheese, Onion and Peppers 2 egg omelet

2 medium eggs
2 oz onion, chopped
1 cup sweet peppers, chopped
1/4 cup grated cheddar cheese
1 PAM spray

Recipe Directions for Susan's Cheese, Onion and Peppers 2 egg omelet

spray pan with Pam butter spray. Chop onion and peppers and saute in heated pan, medium heat. Whip eggs while veggies are sauteing. Add over veggies in the pan, spread cheese over top of mixture, and cook over medium heat until done. Hint: Cover pan for a few minutes to help omelet cook through, then uncover and turn over.
