Recipe Ingredients for Susan's Bean and Sausage Soup

1 1/2 c carrots, chopped
1 c onion, chopped (or small onion, less than 1 c)
14 oz canned tomatoes, petite dice
2 cloves garlic, finely minced
4 c chicken broth
2 t Italian seasoning
28 oz canned navy beans (2 14 oz cans), drained, rinsed
6 oz baby spinach, fresh

Recipe Directions for Susan's Bean and Sausage Soup

  1. Spray pan with Pam.

  2. Brown sausage that has been sliced into rounds.

  3. Set aside.

  4. In same pan, use a little olive oil or Pam to saute carrots and onion for about 5 minutes, stirring occasionally.

  5. Add garlic and cook for another couple of minutes, being careful not to burn the garlic.

  6. Return sausage to the pan.

  7. Add broth, tomatoes, Italian seasoning, pepper to taste, and simmer low for about 30 minutes.

  8. Add spinach only until it is wilted --- about 2 minutes.
