A savory fall and winter vegetable and bean stew

Recipe Ingredients for Susan's Acorn & White Bean Stew

3 T olive oil
1 cup white beans
1 acorn squash, cubed
3 cups parsnips, chopped
1 sweet onion, chopped
2 leeks, chopped
1 sweet pepper, yellow or orange, cubed
5 small tomatoes, cubed
1 large sweet potato
3 cups water
1 T ground ginger
1 T dried marjoram
1 T salt
1 T garlic powder

Recipe Directions for Susan's Acorn & White Bean Stew

  1. soak the beans overnight, drain and rinse;

  2. wash the squash, remove seeds, and cube (do not peel);

  3. wash the parsnips, cut off and discard the ends, and cube;

  4. chop the onion into large chunks;

  5. wash the leeks thoroughly to remove sand and cut into large pieces;

  6. wash the pepper, remove seeds and stem, and cube;

  7. wash the tomatoes, remove stems and cube;

  8. wash the sweet potato, nip off the ends, and cube (do not peel);

  9. saute the onion and leeks in olive oil;

  10. add beans and vegetables, water, salt and herbs;

  11. cover and bring to a slow boil, then reduce heat and simmer for 2 hours or until squash, parsnips and beans have softened.
