Recipe Ingredients for Susanne's Chicken Dish

3 lbs chicken
2 cups chicken broth
3 bell peppers
1 tbsp nutmeg (ground)
1 tsp red pepper
1 tsp salt
1 tsp pepper
1 large onion
1 tbsp peanut oil
1 tsp lemon juice

Recipe Directions for Susanne's Chicken Dish

  1. a note before the recipe: i recommend red, yellow, and orange bell peppers, but the choice is yours - green tends to add a slightly bitter taste that doesnt sit well with the rest of the recipe. you can use red pepper *or* cayenne pepper, the taste is similar, red pepper is less spicy. using less onion does not change the taste much, as i know quite a few picky onion-eaters. the smaller the chunks of chicken, the better, but if you make big chunks you can separate the chunks into smaller chunks while cooking and save yourself some time. ***do not replace peanut oil with another oil***you can use olive oil, but the taste is just not the same. most importantly, you can use low-sodium chicken broth and the recipe tastes even better that normal, and takes down that inordinately high sodium count. also, the cream is optional. enjoy!

  2. sautee' chicken breast, cut into chunks, in peanut oil, lemon juice, salt, pepper.

  3. remove, keep juice with chicken.

  4. sautee' bell peppers, cut into strips, and onion, cut into rings or strips, in lemon juice, salt, pepper, nutmeg and red pepper.

  5. add chicken juice.

  6. allow to sautee until onions and peppers are softer, with just a little crunch.

  7. add 1 cup chicken broth (low sodium), simmer until broth takes on flavor of spices.

  8. add chicken, add second cup of chicken broth.

  9. reseason to taste. bring to a boil, then simmer on medium heat covered for 35 minutes.

  10. remove lid, stir. reseason to taste. add cream. simmer for another 15 -30 minutes. 15 mininum, up to 30 if necessary for cleanup time or meal time.

  11. eat as a soup or stew, or add rice or pasta for a fuller meal. for best results, cook ahead of time, add rice or pasta if desired, allow to cool. then when ready, bring to a boil, simmer until temperature is just right on medium heat, and serve!

  12. the longer you simmer, or the more you reheat, the more the chicken falls apart in your mouth.
