Makes 2 dense loaves; each loaf makes 28 servings; the whole recipe makes 56 servings.

Recipe Ingredients for Susan

1 T yeast, active dry
3 c water, warm
1 T sugar
1 T vinegar
1 T olive oil
3 c all purpose flour
2 1/2 c whole wheat flour, stoneground
1 T coarse or Kosher salt

Recipe Directions for Susan

  1. Heat the oven to 170.

  2. Mix together the yeast, sugar, and water in a large bread making bowl and allow to bubble up and foam. Wait a few minutes until the yeast starts to work, and then add the vinegar and oil. Add the pastry flour, cup by cup, stirring well after each addition. Then add the whole wheat flour, cup by cup, stirring after each addition then mixing in the salt at one point. The dough will be sticky and a bit spongy.

  3. Separate the dough in two equal halves if making two differently flavored loaves. Mix in herbs, nuts, toasted seeds as desired.

  4. Cover with a damp tea towel.

  5. Turn oven off. Place dough in oven in the warmed oven for 30 or 40 minutes until it has doubled in size.

  6. Remove from oven.

  7. Turn oven on to 375 degrees.

  8. Grease loaf pans. Line with a few toasted seeds or nuts if desired.

  9. Using a big spatula, spoon the dough out into the pans. Using your fingers, if needed, press the sides down, helping to create the perfect loaf shape. Do not knead. With a knife, make 2 or 3 diagonal shallow incisions across the top of the loaves.

  10. Bake the loaves about 60 minutes, or until they are golden brown and crusty on top, and sound hollow when tapped on the underside.

  11. Let sit for at least 5 or 10 minutes before slicing.
