Recipe Ingredients for Surprise Cupckaes

2 cup Sugars, Granulated
0.5 cup Butter
6 tbsp Cocoa, Dry Powder, Unsweetened
1 large Egg, Whole
1 cup Milk, Buttermilk, Fluid, Cultured, Lowfat
2.5 cup Wheat Flour, White, All-purpose, Enriched, Bleached
1.5 tsp Vanilla Extract
0.5 cup (8 fl oz) Water
1.5 tsp Baking Soda
8 oz Cream Cheese Light
0.5 cup Sugars, Granulated
1 large Egg, Whole
1 dash Salt, Table
0.5 cup Chocolate Chips Semi-Sweet

Recipe Directions for Surprise Cupckaes

  1. Mix the sugar and butter together. Add cocoa and egg yolks. Stir baking soda into hot water (make sure it's completely dissolved).

  2. Then alternately: add buttermilk, baking soda mixture and flour (A little buttermilk--beat, then some of the baking soda mixture--beat, then some of the flour--beat. And repeat until all three have been completely added to the batter.

  3. Beat eggs whites with vanilla and add to the batter.

  4. Line a cupcake pan with paper liners and fill each cupcake 2/3 full with batter.

  5. The cupcakes will grow in the oven. The batter should not fill up the cupcake liner before it's baked.

  6. To make Filling:

  7. Blend cream cheese, sugar, egg, and salt. Stir in chocolate chips. 

  8. Drop one teaspoon of the filling on top of each cupcake, before it bakes.

  9. Bake at 350 degrees for 22-25 minutes. Test cupcake with toothpick. When toothpick comes out clean, cupcakes are done.
