Recipe Ingredients for Superhero Soup

3 cloves garlic
1/2 onion
2 carrots
3 stalks celery
1 cup collard greens
1 cup kale
1 turnip
1 rutabaga
1 sweet potato
1/2 tsp cayenne pepper
1 tsp sea salt
1 vegetable bouillon cube
28 oz can diced tomatoes

Recipe Directions for Superhero Soup

  1. Chop each vegetable into small, bite sized pieces.

  2. Coat a large pot with cooking spray, place on medium-high heat.

  3. Toss in garlic and cook until golden, then add onions.

  4. Toss in the rest of the vegetables and can of tomatoes (undrained). Cover with water and add bouillon, pepper, and sea salt to taste. Bring to boil.

  5. Once boiling, reduce to a low simmer. Let cook for 1 hour or until vegetables are tender.
