Recipe Ingredients for Superfoods RX Salad

1 cup spinach
1 cup romaine, chopped
1/4 cup red cabbage, shredded
1/2 cup red bell pepper, sliced
1/2 tomato, chopped
1/4 tablespoons cooked chickpeas
1/2 cup carrot, grated
1/4 avocado, cubed
2 tablespoons olive oil
1 teaspoon balsamic vinegar
1 teaspoon lemon juice

Recipe Directions for Superfoods RX Salad

  1. Combine the spinach, romaine, cabbage, pepper, tomato, chickpeas, carrot and avocado in a bowl.

  2. In a separate bowl, whisk together the olive oil, vinegar & lemon juice.

  3. Toss the dressing with the salad just before serving.
