Recipe Ingredients for Superb eggplant Casserole

1 large eggplant
3 tomatoes (Medium)
1 tsp. olive oil
1/2 cup onions (diced or thinly sliced)
1/2 tsp. salt
1 dash of black pepper
1/4 cup bread crumbs (fine, dry)
1/4 cup Parmesean cheese

Recipe Directions for Superb eggplant Casserole

Peel eggplant and cut in 1/2 in cubes. Cook for 6 min. in boiling, salted water. Drain throughly. Scald tomatoes, peel and chop coarsley. (Can use 1/2 can stewed tomatoes if not in season.) Put olive oil in skillet and add onion; cook until tender. Add tomatoes, salt, pepper and eggplant and mix together. Pour into shallow, greased baking dish. Mix together dry bread crumbs and Parmesean cheese and sprinkle on top of eggplant. Bake in 350 degree oven for 20 or 25 minutes, or until crumbs are lightly browned.
