Inspired by the WeightWatchers veggie soup that I used to make way back. Add cooked chicken, beef or tofu to up the protein while still being mindful of calories. Delicious with some crusty bread as a side dish.

Recipe Ingredients for Super Veggie Soup

3 large carrots
1 medium green bell pepper
1 medium orange bell pepper
1 medium onion
8 tsp Chicken Flavor Bouillon
1 tbsp olive oil
1 large zucchini
4 stalks celery
30 Beans, Snap, Green
4 cloves garlic
4 tbsp Hunt's tomato paste
2 tbsp salt
9 cups water

Recipe Directions for Super Veggie Soup

Chop all veggies uniformly (except for onion & garlic) to your size preference. Heat olive oil in large dutch oven pot and saute onions, garlic, carrots, celery and bell peppers for 5 minutes. Add remainder of veggies (except for zucchini) and saute for 3 more minutes. Add water and boullion; bring to a boil. Add tomato paste, stirring well until fully incorporated into the soup. Simmer on medium-low for 25 minutes; add zucchini. Simmer for another 5 minutes & serve. Serving size is 1 cup.
