Healthy bell peppers stuffed with more meaty, vegetably goodness!

Recipe Ingredients for Super Stuffed Peppers

1 red onion
1 clove garlic
1 lb extra lean ground beef
1 zucchini
8 oz mushrooms
1 hot pepper
15 oz corn, canned
15 oz black beans, canned
24 oz pasta sauce
4 oz tomato paste
1 tsp. thyme
1 tsp. basil
1 tsp. oregano

Recipe Directions for Super Stuffed Peppers

  1. Preheat oven to 350 degrees.

  2. Cut the tops off the bell peppers and remove the seeds.

  3. Set the peppers standing upright in a glass dish, about 2" deep, and add a splash of water to the dish.

  4. Microwave the peppers for 5 minutes, to soften them.

  5. While the peppers are in the microwave, chop the onion into 1/4 inch pieces and mince the garlic.

  6. Heat a large nonstick Dutch oven over medium-high heat.

  7. Once the pot is hot, add the onion, garlic, and ground beef.

  8. Brown the meat, breaking it into fine pieces, and stirring as needed.

  9. While the meat is cooking, chop the zucchini, hot pepper, and mushrooms into small pieces.

  10. Add these vegetables to the meat and stir.

  11. Once the vegetables are partially cooked, add the corn, beans, jar of pasta sauce, tomato paste, and the herbs. Stir.

  12. Let simmer for about 10 minutes.

  13. Once the flavors have melded, ladle the meat mixture into the bell peppers, filling to the top.

  14. Cover the opening in each pepper with a layer of cheddar cheese.

  15. Place the stuffed bell peppers in the middle of the oven, and bake until the cheese is lightly browned, about 20 to 25 minutes.

  16. Remove from the oven, and allow to cool for about 5 minutes before serving.
