Recipe Ingredients for Super spinach omelet

1 omega-3 egg
3/4 cup liquid egg whites
1/4 cup onion, chopped
1/4 cup mushrooms, sliced
1 cup raw spinach, chopped

Recipe Directions for Super spinach omelet

  1. Whisk the egg and whites together until just blended. Set aside.

  2. Spray a small frying pan with nonstick spray and heat over medium-high heat. Add onions and mushrooms and cook until onions are translucent. Add spinach and cook just until wilted. Remove from heat and set aside.

  3. Wipe out the pan and reapply nonstick spray. Add eggs and cook over medium-high heat, occasionally lifting edges to allow uncooked eggs to run beneath. When almost fully set, flip the omelet and remove from heat. Add veggie mixture to top, fold over and serve immediately.
