Yummy twist on original Enchiladas Verdes. Makes a good slow cooker cassarole also if you make a few modifications.

Recipe Ingredients for SUpER Spinach Enchiladas Verdes

2 cloves garlic
1 red onion
6 cups frozen spinach
18 tbsp sour cream
6 tortillas
3 oz. shredded cheese
1 can cream of celery soup
1/5 grams diced green chili peppers

Recipe Directions for SUpER Spinach Enchiladas Verdes

  1. For the ENCHILADAS:

  2. Sautee garlic and onion in a little EVOO on a hot pan. Add Spinach (no need to defrost). Once the onions and spinach are cooked well, turn to low heat. (there should be extra spinach/onion mixture after your last tortilla)

  3. Grab first tortilla, lay flat and sprinkle a little cheese down the middle. Then, add the spinach mixture in a similar amount as the cheese on top. Roll the tortilla so to look like an enchilada.

  4. For the SAUCE:

  5. Empty can of soup and chili's into blender. Add left over enchilada filling as well as one saved cup of frozen spinach and a touch of salt. Blend until turns a rich green color. Add Sour cream and blend until smoothe.

  6. 2 ways to bake:

  7. -Lay enchiladas in a row on a rectangular cassarole dish, pour sauce over,smothering the enchiladas and bake in oven @ 350 degrees for 30-40mins.

  8. -Lay enchiladas in slow cooker with the sauce the same way on low for 3-4 hours (with the crock pot you can also experiment with layers!)
