This is a wonderful soup to enjoy anytime... especially during the harvest season when so much fresh produce is available! You can use ANY veggies, and substitute vegetable broth to make it 100% vegetarian. FAT FREE!

Recipe Ingredients for Super Soup

8 cups fat free chicken broth
2 onions
1 head cabbage
4 stalks celery
2 cups spinach
3 cups mixed vegetables
2 zucchini
28 oz. tomatoes
3 tablespoons dried parsley
2 teaspoons black pepper
1 sea salt to taste

Recipe Directions for Super Soup

  1. Chop all vegetables into bite-sized pieces.

  2. Bring broth to a boil.

  3. Add onion, celery, cabbage, mixed vegetables, tomatoes, and spinach along with seasonings, and cook 10 min.

  4. Lower heat and simmer until almost tender.

  5. Add zucchini. Cook only about 3 min. (the zucchini will continue to soften even after removed from the heat.)

  6. Add water as necessary to keep broth level.
