Excellent vegetarian soup full of flavor and very hearty. Makes a large amount of soup and it freezes well. Lots of protien & fiber.

Recipe Ingredients for Super Soup

2 cups carrots (sliced)
1 rutabaga
2 cups cooked wild rice
1 medium onion (diced)
30 ounce petite diced tomatoes
4 cups chopped cabbage
2 cups broccoli (chopped)
2 cups cauliflower (chopped)
15 ounce garbanzo beans
15 ounce sliced green beans
1 ounce onion soup mix
12 ounces vegetable juice
5 tsp chicken boullion
15 ounces canned potatoes

Recipe Directions for Super Soup

Cut up rutabaga, carrots and onion, place in large roaster pan with soup mix (I use Mrs. Grass Homestyle vegetable) and just enough water to cover. Cover pot & bring to a boil. Add stewed tomatoes and vegetable juice and return to boil. Cut up broccoli, cauliflower and cabbage while 1st ingredients are cooking. When carrots are about 1/2 cooked, add rest of ingredients including juice from canned items and chicken boullion powder to taste and simmer until vegetable are ala dente (or to your preferred texture) approx 20-30 minutes. Enjoy!
