Super-Sized Berry-nana Oatmeal Parfait

This large layered treat is super filling. Chill the oatmeal the night before for an easy breakfast!

1/3 cup old-fashioned oats

1 no-calorie sweetener packet

1/8 tsp. cinnamon

Dash salt

3/4 cup Unsweetened Vanilla Almond Breeze

1/8 tsp. vanilla extract

1/2 cup fat-free vanilla yogurt

1/2 cup sliced strawberries

1/2 medium banana, sliced



To make the oatmeal, in a small nonstick pot, combine oats, sweetener, cinnamon, salt, Almond Breeze, and vanilla extract. Mix in 3/4 cup water.

Bring to a boil and then reduce to a simmer. Cook and stir until somewhat thick and creamy, about 9 minutes. (It will thicken upon chilling.)

Transfer to a medium bowl and let slightly cool. Cover and refrigerate until chilled, at least 1 1/2 hours.

Stir oatmeal. In a tall glass, layer half of each ingredient: oatmeal, yogurt, strawberries, and banana.

Repeat layering with remaining ingredients. Yum time!


Makes 1 serving

Entire recipe: 285 calories, 4.5g fat, 359mg sodium, 54g carbs, 6.5g fiber, 21.5g sugars, 9g protein

This seams exquisite but every time I eat oatmeal and fruits I bloat totally....does anyone know why? I can only eat oat with yogurt or milk or almonds...

the only reason i know that someone gets bloated is because of fiber.  but if u keep eating fiber, the bloating goes away

but 54 carbs?? isn't that high??


As I read recipe for parfait I thought this sounds like the oatmeal recipe suggested by Lisa Lillian (Hungry Girl) then I saw the Hungry Girl logo to the right. Her recipe is half cup old-fashioned oats and one cup each of water and unsweetened almond milk. It takes 10 minutes to cook. I usually add Splenda and a dash of more milk prior to consuming (Splenda brown sugar is good too if you can find it). I usually eat half (stop when full) then eat other half later. This was part of a life-style change in which I've lost 55 pounds over a two-year period. Just remember the weight didn't go on in a month and it takes awhile to get it off. Treat yourself to whatever you want on Sunday and do the diet thing the other six days. This is my method but as they say--different strokes for different folks. 

They are "good carbs". It's filling and the fiber is worth the carbs.

portion sounds a little high for me. I could probably cut it in half, or just cut the oatmeal down too....

you gotta be careful with oatmeal. can cause bloating.

I will eat only about half the portion then wait to when I'm hungry again--usually a couple hours later--put in microwave and eat the remaining. I've never experienced bloating when eating oatmeal--guess I'm lucky.

This recipe picture caught my eye, however I fully expected to read Overnite Oatmeal instead of cooking it.  I make this with 1/3 Cup Oats, 2/3 Cup Coconut Milk or 1/2 milk 1/2 water. Add 1 Tbl raisins & Cinnamon. Put in fridge overnite.

In morning add whatever fruit floats your boat for the day! Enjoy!

I have totally cut artificial sweeteners out of my diet.  the only one I will touch is Trivia or Stevia which are natural.  I would take the extra 20 minutes and only buy Steel Cut Oats.  Higher fiber, longer digesting, long to cook but so much better for you.  Yes, the carbs seem high, but they are complex carbs.  If you are in the gym your carbs can be higher.  Remove the banana and add more blueberries.  I would not add the extra calories with cooking in the Breeze.  I would just add water and then sprinkle with cinnimon.


Since steel cut oats takes longer to cook, I ususally cook alot up and put them in serving size containers and freeze them.   I mix Herbalife Protein Powder and it is terrific.

Dared to enter the kitchen and make this for my hubby and I last time it was posted.  We both loved it!  And I will add that we did not have a parfait cup large enough to use all ingredients so we had dessert two nights in a row. Now I want it again.....
