Had this at a restaurant and decided to try it at home... They are very rich and 2 made a good meal.

Recipe Ingredients for Super Simple Spinach and Asiago Stuffed Portabella Mushrooms

8 oz Portabella mushroom caps
1 c spinach, cooked
2 oz Asiago cheese, shredded

Recipe Directions for Super Simple Spinach and Asiago Stuffed Portabella Mushrooms

  1. Steam spinach till hot through.

  2. Place mushroom caps on cookie sheet or shallow dish.

  3. and spoon 1/4 c cooked spinach into each cap.

  4. Place under broiler for 2 minutes. Place some of the shredded cheese on each - reserving some for later if desired. Broil for an additional 1-1/2 minutes or until cheese is melted.

  5. Add additional cheese at the table if desired.
