These cookies are not too fat, not too sweet, and are filled with lots of "Super" foods.

Recipe Ingredients for Super Pumpkin Cookies

1/4 cup butter
1/4 cup brown sugar, packed
1/2 cup honey
1/2 cup applesauce
1/2 cup yogurt
1 cup pumpkin
1 egg
1 teaspoon vanilla
1 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon salt
1 1/2 teaspoons cinnamon
1/4 teaspoon nutmeg
1/8 teaspoon cloves
2 tablespoons wheat germ
2 tablespoons flaxseed
2 cups whole wheat flour
1/2 cup soy flour
1 1/2 cups oats
1/2 cup dried blueberries
1/4 cup semisweet chocolate
1/2 cup walnuts

Recipe Directions for Super Pumpkin Cookies

  1. Cream butter and brown sugar. Stir in honey, applesauce, yogurt, and pumpkin. Add egg and vanilla.

  2. In separate bowl, stir together baking powder, baking soda, salt, cinnamon, nutmeg, cloves, wheat germ, flaxseed, and flours. Add to creamed mixture. Stir in oats, blueberries, chocolate chips and walnuts.

  3. Drop by teaspoonfuls onto cookie sheets. Bake at 350 F for 10-12 minutes.

  4. Top with Penuche Frosting
