Vegan: Without oil and less sugar

Recipe Ingredients for Super Moist Chocolate Chip Muffins

2 cups flour
1/3 cup brown sugar
3 teaspoons baking powder
1 teaspoon salt
3/4 cup soy milk
1/3 cup applesauce
1 tablespoon ground flax seeds
3 tablespoons of water
3/4 cup chocolate chips
1/4 cup wheat germ

Recipe Directions for Super Moist Chocolate Chip Muffins

  1. Preheat oven to 400 degrees Fahrenheit. In a mixing bowl, mix water and flax seeds. Set aside. In a medium mixing bowl: add flour, 1/2 cup of sugar, baking powder, salt, and chocolate chips. To the flax seed gel add: soy milk and applesauce.

  2. Add the wet mixture to the dry mixture all at once. Stir just until combined and do not over-mix. Add batter into a muffin pan and fill the muffin wholes two-thirds full. Bake for about 15-20 minutes.
