Recipe Ingredients for Super Moist Banana Nut Muffins

1 1/8 cups all-purpose flour
1 1/2 teaspoons baking powder
1/4 teaspoon salt
1/4 teaspoon cinnamon
2 (overripe) bananas
3/4 cups sugar
6 tablespoons unsalted butter (soft)
1 eggs
1/2 teaspoon vanilla

Recipe Directions for Super Moist Banana Nut Muffins

  1. Preheat oven to 375 and lightly grease and flour 12 muffin tins.

  2. In a large bowl, combine the flour, baking powder,cinnamon and salt; set aside.

  3. With an electric mixe, whip the bananas and sugar together for a good 3 minutes. Add the soft butter, eggs, and vanilla and beat well, scraping down the sides of the bowl once or twice.

  4. Mix in the dry ingredients just until incorporated.

  5. Spoon the batter into the muffin tins to fill them about halfway. Bake until a toothpick stuck in the muffins comes out clean, about 20 minutes. Let cool for a few minutes before turning the muffins out.
