Meatloaf with veggies snuck into it for extra healthy ooomph!! Add whatever veggies you have on hand that can be chopped or grated. No guilt for this comfort food and it makes amazing sandwiches the next day!

Recipe Ingredients for Super Meatloaf!

2 1/2 lb. round steak, ground
1/2 c carrots, grated
1/2 c mushrooms, chopped
1/4 c tomatoes
1/4 c green pepper, chopped
1/4 c onion, chopped
1 tbsp garlic, minced
1 egg
1 salt and pepper
1/2 c catsup
2 tbsp mustard
2 tbsp brown sugar
1 tsp Worchestershire sauce
1 tsp lemon juice
1 hot sauce to taste

Recipe Directions for Super Meatloaf!

  1. Chop all the veggies and mix them together in a large bowl.

  2. Beat egg lightly with salt and pepper, and mix into veggies.

  3. Add ground round and mix thoroughly. Clean hands work best!

  4. Form into a loaf. Place the loaf on a roasting style pan so the fat drains off as it cooks. Clean up is easiest if you put water in the bottom of the roaster.

  5. Mix catsup and the rest of the ingredients into a bar-b-q sauce. Pour 2/3 sauce over meatloaf.

  6. Bake at 375* for 45 min.

  7. Add the rest of the sauce and bake another 15 min.

  8. Remove from oven and cover loosely with aluminum foil. Let loaf rest at least 15 min. before slicing.

  9. Meatloaf slices best when cool, so you may want to slice just the amount you need for the meal, and slice the rest when it has cooled.
