Recipe Ingredients for Super Mashed Potatoes

8 medium potatoes
1 acorn squash
3/4 cup 2% milk
1/4 envelope nonfat dry milk

Recipe Directions for Super Mashed Potatoes

  1. Peel and cut potatoes into eights and cook in boiling water until just tender.

  2. While cooking potatoes, cut acorn squash in half, scoop out seeds and microwave until tender.

  3. Drain potatoes and allow to steam over heat (covered) until dry and mealy.

  4. Add acorn squash pulp and mash (you can also rice the potatoes first and puree the squash with the milk in a food processor for a smoother texture).

  5. Mix milks (AKA fortified milk) and stir into the vegetables - salt to taste.
