Rich flavorful soup loaded with vitamins, iron, calcium and a ton of fibre. Low fat, low sodium and cholesterol free! All this needs is a toasted slice of whole grain & seed bread to be a meal!

Recipe Ingredients for Super Lentil Soup

1 cup low sodium chicken broth
2 cups water
1 1/2 cups chopped broccoli
1/2 cups chopped leek
1 cup canned diced tomatoes
10 sun-dried tomato pieces
1 carrot, diced
1 stalk of celery, diced
1/2 small onion, diced
19 oz. lentils, drained & rinsed

Recipe Directions for Super Lentil Soup

Boil the broccoli, sun-dried tomato & leek in 2 c. water until really soft, at least 30 minutes. Remove from heat & discard the larger tomato pieces (about 1/2). Puree the mixture until smooth. Return to low heat & add all other ingredients. Simmer over low heat for at least another 30 minutes. Season to taste with garlic powder, herbs de provence and black pepper.
