This lasagna is packed with veggies, but you could never tell just by the taste.

Recipe Ingredients for Super Lasagna

1 1/4 lbs Jennie-O ground turkey
8 oz whole wheat lasagna noodles
1 eggplant
4 oz frozen spinach
1 onion
1 1/2 cup cooked carrots
2 cloves garlic
15 oz. canned tomatoes
16 oz. greek yogurt - plain
1 egg
7 oz. Mozzarella

Recipe Directions for Super Lasagna

  1. slice eggplant & roast till softened (optional: peel first)

  2. Puree cooked carrots & combine with tomato sauce, season to taste

  3. boil noodles according to directions, but still a little firm

  4. brown turkey, onion, & garlic then drain

  5. combine yogurt and egg, season to taste

  6. layer ingredients and top with cheese

  7. bake at 375 for 1 hour covered with foil

  8. remove foil and bake for 5 minutes

  9. let rest for 5-10 minutes before eating
