Yummy moist Bran muffin that freezes well to keep for quick snacks.

Recipe Ingredients for Super Healthy Carrot Bran Muffins

1 1/2 cup All Bran
1 cup boiling water
1/2 cup canola oil
1 1/2 cup brown sugar
1/4 cup honey
3 whole eggs
1 pint buttermilk
2 1/2 cup whole wheat flour
3 1/2 teaspoon baking soda
1 1/2 cup oatmeal
1 1/3 cup carrots, shredded
1 teaspoon salt

Recipe Directions for Super Healthy Carrot Bran Muffins

  1. Pour boiling water over All Bran and set aside for 10 minutes.

  2. Beat oil, sugar adn honey until well blended.

  3. Add eggs, one at a time, beating well after each addition.

  4. Stir in buttermilk and soaked bran cereal.

  5. Mix all dry ingredients together in separate bowl.

  6. Add dry ingredient mixture to egg mixture.

  7. Mix Well.

  8. Stir in oatmeal and carrots.

  9. Let stand 1 hr or overnight in refrigerator.

  10. Heat oven to 350 degrees. Fill greased muffin cups 2/3 to 3/4 full with Batter.

  11. Bake 25-35 min.
