Power-packed vegetable soup with a unique green color. Add additional spices/seasoning to taste, or substitute your favorite vegetables.

Recipe Ingredients for Super Green Soup

1 lb frozen spinach
1/2 lb frozen broccoli
1/2 lb frozen green beans
2 cups garbanzo beans, rinsed
2 cups white beans, rinsed
2 cups celery, diced
2 cups onion, diced
1 tsp ground sage
1 tsp black pepper
1/4 cup lemon juice
3 cloves garlic, minced
2 cups vegetable broth, low sodium
6 cups water

Recipe Directions for Super Green Soup

  1. In a large pot, combine spinach, broccoli, green beans, celery, onion and water. Bring to a boil, then cook over medium-high heat for 20 minutes or until vegetables are tender.

  2. In a blender, combine garbanzos, broth, lemon juice, garlic, sage and pepper. Puree until smooth.

  3. When vegetables are done cooking, puree 1/2 through blender and return to pot. Add garbanzo mixture and white beans. Stir well.

  4. Cook over medium heat for 10 minutes or until heated through.

  5. **This makes about 18 1-cup servings. I usually make a large batch and freeze in smaller portions for future use.**
