These definitely make you sick once you've downed the entire recipe, but they're so worth it... Maybe.. Modified from www.theadventuresofsuperwife.com. One serving is one pancake.

Recipe Ingredients for Super Fluffy Vegan Pancakes.

1/2 cup whole wheat flour
1/2 cup buckwheat flour
1 tbsp turbinado sugar
1 tbsp baking powder
1 tbsp canola oil
1/2 tsp salt
1/2 cup rice milk
1/2 cup water
1 tbsp canola oil

Recipe Directions for Super Fluffy Vegan Pancakes.

  1. Mix everything together in a medium mixing bowl - just enough to incorporate the wet ingredients into the dry. (If you mix too much during any of these steps, your pancakes will turn out really tough.)

  2. Let the batter sit for five minutes.

  3. Gently fold the batter again.

  4. Let sit for an additional 5-10 minutes. The longer you let them sit, the fluffier your pancakes will be.

  5. Fry pancakes on a lightly greased skillet on medium-low heat, gently breaking apart any lumps that may remain. Let the first side cook until un-poppable bubbles/crevices form on the visible side of the pancake. Flip the pancake over. From there, you can rely on your best judgement. (A positive thing about vegan cooking and baking is that you can't easily poison yourself by inadvertently cooking something too little - almost everything you use can be eaten raw..it just might not be pleasant.)
