I eat this for breakfast, but you can also eat it for lunch. Spices were added to my taste (cayenne, cinnamon, paprika, crushed red pepper)

Recipe Ingredients for Super Fiber Cuban Breakfast

15 ounces black beans
8 ounces diced tomatoes
1 yellow onion
1 potato

Recipe Directions for Super Fiber Cuban Breakfast

Saute onions and potato in a pot sprayed with olive oil. Add black beans and tomato, plus half a can of water. Cover and simmer for 25 minutes, or until potatoes are tender.
