Very good cookies, perfect for the morning coffee or with a fatfree plain yogurt! This is the basic resipe but you can add nuts or blueberries/strawberries or any dry fruits you like.

1 cup flour
1 egg
50 g canola oil
2/3 cup brown sugar
1 tsp baking powder

  1. Turn on oven to 190C. Line a cookie sheets with a perchament paper, set aside.

  2. With the hand ellectric mixer beat very well the egg with the canola oil until fluffy. Gradually add the sugar and continue to beat until it dissolves. Sift together the flour and baking powder, stir in the cream mixture. Stir with a wooden spoon until it'd well combined. Batter should look like a thick cream. At this point you can add some extra ingredients you want: nuts, raisins, dry fruits or coconut flackes... Drop by a teaspoonfuls onto the prepared baking sheets, about 1/2 inch apart. Bake about 10-12 minutes, or until cookies are lightly brown. Remove from the oven and allow to chill completely on a wire rack. Cookies will be soft while are still warm, but will get harder when cooled.
