A veggie-licious pasta bake. I usually use rigatoni instead of rotini, so use what you like.

Recipe Ingredients for Super Duper Veggie Deluxe Rigatoni Pasta Bake

1 lb whole wheat rotini, prepared
2 cups tomato, chopped
2 cups zucchini, chopped
1/2 cup green pepper, chopped
1 small onion, chopped
1 1/2 lb Spaghetti Sauce, Meatless, Canned
2 cups cheddar cheese, shredded

Recipe Directions for Super Duper Veggie Deluxe Rigatoni Pasta Bake

  1. Preheat oven to 350 degrees

  2. Prepare pasta per directions and drain. Place in 9x13 pan.

  3. Layer veggies on top of pasta and stir in gently.

  4. Pull spinach apart and layer across pasta.

  5. Pour pasta sauce over the entire thing.

  6. Layer half of the cheese on top.

  7. Bake for 35 - 45 minutes, adding the remainder of the cheese to melt for the last 5 minutes.
