Simple meal, filling with little calories. If you never liked tofu, you will love this way of making it tasty instead of soggy !

Recipe Ingredients for Super deli spinach and tomatoes with tofu

2 cups frozen spinach
1/2 lb tofu
10 oz canned diced tomatoes
2 garlic cloves
1 teaspoon olive oil
1/2 teaspoon dried oregano
1/2 teaspoon dried basil
2 cups couscous

Recipe Directions for Super deli spinach and tomatoes with tofu

  1. Cut the tofu in small dices. Let brown in oil at medium high until the tofu is golden and has dried to form a crust on the surface (about 30 min). Stir a lot at first, toss from time to time after that. (You can make extra tofu and freeze the rest of the cooked tofu, it will keep for months and be a nice add to other recipes.)

  2. Add the canned diced tomatoes, the thawed spinach, minced garlic. Salt & pepper to taste. Set aside to simmer for about 20 minutes.

  3. Meanwhile, put 2/3 cup dry couscous in a pan. Start to heat at medium high and add some water, a little at a time (just enough to moist) and stir until absorbed. Continue adding water until the couscous is soft and doesn't stick together. It should make about 2 cups when cooked.

  4. Serve the sauce over couscous and enjoy !
