Tasty, easy muffins that can be made as mini-muffins or regular sized (15-18 muffins)

Recipe Ingredients for Sunshine Muffins

1 1/2 cups all purpose flour
1 cup whole wheat flour
1 cups sugar
1 tsp baking powder
1/2 tsp salt
3/4 cup margarine
3/4 cup egg substitute
2/3 cup orange juice
1 tsp vanilla
1 tsp orange extract
1 tbsp Orange Marmalade Sugar Free Marmalade
1/2 cup chopped walnuts

Recipe Directions for Sunshine Muffins

In a large bowl, combine the flours, sugar, baking powder and salt. Add remaining ingredients; stir just until moistened (batter may be lumpy). Fill greased or paper lined muffin cups 2/3 full. Bake at 350 degrees F for 15-20 minutes or until top of muffin springs back when lightly touched.
