Nice in place of rice, potatoes, pasta

Recipe Ingredients for Sunshine Couscous

2/3 cup Couscous, Dry]
1 tbsp olive oil
1/2 cup raisins
1 cup water
1/2 cup lemon juice
1/2 tsp oregano
1 tbsp roasted garlic
1 tsp parsley flakes

Recipe Directions for Sunshine Couscous

Place the water and lemon juice in a small pot and bring to a boil. Add couscous, oregano, roaster garlic and raisins. Remove from heat and let sit for approximately 5 minutes. Stir in parsley flakes. Fluff with fork and serve.
