Recipe Ingredients for sunshine bread-cantaloupe

27.76 oz Melons, Cantaloupe
3 large Egg, White
112 grams ICBINB! Light (Soft)
10 grams splenda essentials
1 tbsp Vanilla Extract
2 cup Wheat Flour, White, All-purpose, Enriched, Unbleached
1 cup Wheat Flour, White, All-purpose, Enriched, Unbleached
1/4 cup Wheat Flour, White, All-purpose, Enriched, Unbleached
1 tsp Baking Soda
1 tsp Baking Powder
2 tsp Cinnamon, Ground
2 dash Salt, Table

Recipe Directions for sunshine bread-cantaloupe

  1. * In a large bowl, beat together the first 5 ingredients until thoroughly mixed

  2. * Sift together the rest of the ingredients in a separate bowl

  3. * Combine the wet and dry ingredients

  4. * Pour batter into two lightly greased loaf pans or one lightly greased 9?x13? cake pan

  5. * Bake in a preheated 325 degree oven for about 60 minutes. If using a cake pan, start with 45 minutes and check the cake?s doneness before baking it longer. Bread/cake is done when a toothpick or knife inserted in the center comes out clean

  6. * For the cake, sprinkle it with powdered sugar, if desired. For bread, if desired, spread with butter. This bread also stores well in the freezer!

  7. *To make the cantaloupe puree: Peel, seed, and chop a slightly overripe cantaloupe. Place pieces in a blender or food processor. Depending on the strength of your blender or food processor, add water if needed (my blender usually requires 1/4-1/2 cup water to survive blending the squishy cantaloupe. It?s kind of a wimp.) Blend the fruit until it is thoroughly pureed. Use two cups for this batch of Sunshine bread and store the rest of the puree in the freezer for future batches.
