Carrot muffin with pineapple, applesauce instead of oil, vinegar and soy (like buttermilk) to help rise, chock full of good things.

Recipe Ingredients for SUNRISE CARROT-PINEAPPLE SPICE MUFFINS

3/4 cups all-purpose flour
3/4 cups whole wheat flour
1/2 cup oats (not instant or quick)
1 tsp baking powder
1 tsp baking soda
1/8 tsp salt
1/2 tsp cinnamon
1/2 tsp ginger
1/4 tsp nutmeg
1/2 cup brown sugar
1 egg, lightly beaten
1/4 cup applesauce
1 tsp vanilla
2 tsp vinegar
1/2 cup soy milk
8 ounce crushed pineapple in juice, drained
1 1/2 cups carrots, grated
1/2 cup raisins

Recipe Directions for SUNRISE CARROT-PINEAPPLE SPICE MUFFINS

  1. Preheat oven to 350 degrees.

  2. Spray muffin tin(s) with nonstick cooking spray.

  3. Wisk flours, oats, baking powder, baking soda, salt, cinnamon, ginger and nutmeg in large bowl.

  4. In a medium bowl, stir brown sugar, egg, oil, vanilla, and soy milk until well blended.

  5. Stir in pineapple, carrots and raisins.

  6. Add wet ingredients to dry and mix until just moist. Fill muffin cups 3/4 full.

  7. Bake for 20-25 minutes until toothpick comes out clean or top springs back when pressed.

  8. Makes 12 muffins.
