Recipe Ingredients for Sunrise Breakfast Cup - Low Fat

5 cups shredded potatoes
3 cups egg beaters
10 tbs. turkey bacon bits
100 grams fat free shredded cheese

Recipe Directions for Sunrise Breakfast Cup - Low Fat

  1. Preheat oven to 450.

  2. Place a pinch (less than 1/2 c.) of thawed shredded potatoes in 12 lightly greased muffin cups. Lightly press to form a nest. Salt and pepper to taste.

  3. Bake for 15 minutes, until edges are toasted.

  4. Reduce heat to 350. Place 1/4 cup of egg substitute into each nest. Salt and pepper to taste.

  5. Sprinkle each egg with bacon bits and top with cheese.

  6. Bake for 15 minutes.
