A Japanese salad. I couldn't find the Harasume noodles the recipe calls for so I used rice vermicelli noodles (100-110 g dry). The proper amount of sake is 1 T.

Recipe Ingredients for Sunomono Salad

4 oz noodles, dry rice (100 g dry)
1/4 cup small shrimp
1/4 cup cucumber, English (5-6 slices per serving)
1/2 tsp ginger root, minced
1/2 cup rice vinegar
3 tbs sugar
1/4 tsp salt
1 oz sake
1/4 tsp soy sauce

Recipe Directions for Sunomono Salad

  1. Cook noodles according to package directions; drain and rinse under cold water.

  2. Combine noodles, shrimp, and cucumber slices in a bowl.

  3. Mix together vinegar, sugar, salt, sake, soy sauce as dressing and pour over solids in bowl.

  4. Chill about 1/2 hour to allow flavors to blend.
