Recipe Ingredients for Sundried tomatoes, basil and pecorino polenta muffins

150 g self raising flour
110 g polenta
60 g pecorino cheese
1 egg
250 ml skimmed milk
80 ml olive oil
45 g sun dried tomatoes
1/2 cup chopped basil
1 cup spinach

Recipe Directions for Sundried tomatoes, basil and pecorino polenta muffins

  1. Preheat oven to 180 degrees Celsius

  2. Grease 12hole standard muffins tins or 24 mini muffin tins or line with paper cases

  3. Sift flour into large bowl and stir in polenta and pecorino

  4. Season with black pepper

  5. Make a well in the centre of the bowl

  6. Combine egg, milk and olive oil in a bowl and pour into well

  7. Add tomatoes,basil and spinach

  8. Stir in quickly until just combined

  9. DO NOT OVERMIX and keep batter slightly lumpy

  10. Spoon into muffin tins

  11. Bake for 20-25 minutes for standard size muffins

  12. Bake for 10-12 minutes for mini muffins or until muffins are golden and come away from the side of the tin.

  13. Serve warm by itself or with butter
