tasty, lower cal version of sundried tomato alfredo with shrimp.

Recipe Ingredients for Sundried Tomato, Squash & Shrimp Elbows

28 g sundried tomato strips
69 g canned pumpkin
110 g frozen squash
196 g raw shrimp
3 g pesto
4 g basil
15 g tomato paste
30 g red onion
3 g garlic
6 g reduced fat cream cheese
112 g barilla elbows plus

Recipe Directions for Sundried Tomato, Squash & Shrimp Elbows

marinade shrimp in pesto & basil. mix pumpkin, squash and tomato paste. cook pasta. sear shrimp in sautee pan, remove. caramelize onions, then lightly sautee garlic. add pasta, coat with pumpkin & squash mixture, toss in sundried tomato strips. add in shrimp and a little grated nutmeg. serve immediately with (optional) grated parmesan.
