Sundried Tomato Spread for Crackers

Recipe Ingredients for Sundried Tomato Chevre Spread

1/3 cup sundried tomatoes
4 oz. reduced-fat cream cheese
4 oz. goat cheese
2 tsp dried basil
3 cloves garlic
1/8 tsp. black pepper
2 tbsp. skim milk

Recipe Directions for Sundried Tomato Chevre Spread

  1. Put sundried tomatoes in a small bowl and cover with boiling water . Let the tomoates stand for about 10 min. Drain and discard the liquid. Chop the tomoates as finely as possible.

  2. Next, stir the chopped tomatoes, goat cheese, cream cheese, basil, garlic and black pepper. Stir enough milk to make the mixture creamy and spreadable.

  3. Cover and Chill for 2 to 4 hours. Serve with Melba toast or rye crackers.
