Recipe Ingredients for Sundried Pest Chicken

2 chicken breast
1/2 cup sundried tomatoes
1/2 cup basil
2 tbsp olive oil

Recipe Directions for Sundried Pest Chicken

  1. Preheat oven to 375F.

  2. Add 2 tbsp extra virgin olive oil to skillet and sear two chicken breasts on both sides (about 2 minutes per side).

  3. While searing chicken breasts, put 1/2 cup sundried tomatoes (prefer the packed in oil kind that's been drained) and large sprig of basil (about 1/2 cup chopped) into a food processor. Add 4 medium smashed cloves of garlic. Mince until almost a paste.

  4. Remove the chicken from skillet and put in pyrex or casserole dish (oven safe). Top each breast with half the sundried tomato mixture and cover with foil.

  5. Bake for 30 minutes, remove foil, and finish baking for 10 more minutes.

  6. Cut chicken breast in half for one serving.
